My sons camp is doing International Food Day on Monday and each group has to bring in a dish from another country. My sons group got Mexico.
Does anyone have kid friendly recipes for Mexican or just Mexican thats not kid friendly would be awesome as well. I know tacos but something different would be good.

But my fave is still tacos (premade/seasoned ground beef taco meat at home, bring premade taco shells & all the fixings)
Dessert purchased at a little Mexican store or in the Mexican aisle at your local grocery store.

get some whole wheat or corn tortillas, heat them up and add sugar + cinnamon and roll them up like taquitos. You can also add a fried banana into each one then roll into tin foil to keep them warm and soft.
or you could do taco soup (SO easy and feeds a ton of ppl!)
2lbs ground meat (i use turkey)
2 cans corn or equivalant frozen
2 cans black beans (or 1 can black and 2 can pinto)
2 cans rotel
1 4oz green chiles
1pkg taco seasoning
1pkg ranch dressing mix
basically cook the meat and throw everything into a large pot (don't drain any of the cans. put it all in there) and heat! DONE
top with crushed tortilla chips, guac/sour cream, and cilantro!
How about salsa, guacomole, and chips???
For the salsa: Add (fresh) tomatoes, green onion, cilantro, jalepeno pepper all together.
And for guacomole: Add some of the salsa to some mashed up avocados.
You can even go all out for the chips and make homemade tortilla chips fast and easy. Just heat up a pan of oil and cut up some flour tortillas into triangles and fry until golden brown, put some salt on them and your good to go.

Spanish cooking is a little different from Mexican food.
It is also different from Tex Mex. So keep that in mind.
Aguas Frescas (Flavored Waters)
Agua Sandia
(Watermelon - Flavored Water "
2 cups Cubed and seeded Watermelon
1/4 cup sugar
1 quart water
Juice of 1 key Lime.
Blend Watermelon, sugar, 2 cups of water and lime juice until liquefied. Strain watermelon Mixture into 1 quart water: discard residue. Add more sugar if needed. Serve cold.

To make Mango water substitute Mango for watermelon and leave out the lime juice.
Lucky for me I married into a spanish family LOL!!! These are fun "kid" type things I've learned through my in-laws side of the family....
Cinnamon Tortillas
Soft flour tortillas
1 tsp cinnamon
1 Tbls sugar
butter
Mix cinnamon and sugar together. Melt butter then brush both sides of the tortilla and sprinkle sugar mix all over it. Roll up like a tight burrito, if necessary use a toothpick to hold. Place them on a cookie sheet and bake at 375 for approx 5-7 minutes until crispy. **These are usually served w/a spiced hot chocolate:)
Mexican Chocolate Sauce
4 oz.Dark Bakers Chocolate (or about 1/2 c dark chocolate chips)
1/4 c Heavy Cream
1 tsp cinnamon
1 TBLS sugar
Melt chocolate with cream in a saucepan over low heat, stirring constantly until smooth. Add cinnamon, stir. Pour into a serving dish and sprinkle with sugar. **This is used to put over ice-cream, dip churros or other mexican pastries in.
MINI TAZAS
1 bag of Scoops tortilla chips
refried beans
cheese
salsa
sour cream
Chives (diced fine)
Fill the Scoops chips with beans and cheese and melt under the broiler until cheese is bubbly. Top with salsa and sour cream and garnish with chives.

I don't know how much work you want to put in to it but I have 2 ideas of easy ones, if you want something more elaborated you can PM, I am Mexican and have a few recipies
FLAUTAS:
Boil chicken with salt, pepper and onion until cook, then let it cool down until you can touch it.
Sheered it.
Fill some tortillas with the chicken and roll them, secure them with a tooth pick, and you can cut them in half. "Make sure your tortillas are warm before rolling" other way they would brake.
Fried them until light golden. put them in a plate with paper towel to let cool down and absorve the oil.
In a big plate put a bed of lettuce and then put flautas on it, leaving some space in the middle for some guacamole. Pour on top of the flautas a little sour cream, cheese and some tomatoes (diced).
Nachos Mexican style
Very easy and every body love them.
Buy a bag of tostitos (the ones that comes in triangle shape). place them in a bake sheet, put some fried beans ( you can buy the can) on them and Mexican cheesse.
Bake until cheese is melted.
Meanwhile, in a boul mix diced tomatoes, diced onions, parsley and some salt. Make all your dicing small so they fit nice in the nachos.
You can serve the nachos with the salsa, sour cream or hot sauce for the grown ups.

churros, guacamole or pico de gallo & chips, black beans, fruit such as mangos or bananas, a dish made with mole (a chocolate sauce put on meat), plantains (you can boil them with the skin on or you can fry them cut up small, eat them with queso fresco & cream). I am from Guatemala (borders Mexico) and just trying to think of stuff I ate when I was little.
My grandchildren like this...
Rinse a can of black beans.
Add a drained can of whole kernel corn.
Add a can of diced tomatoes with chopped green chilies after you have poured some of the juice off.
Add about 1/2 cup or less Pace medium (yellow label/lid) Picante sauce and mix well.
Serve with Frito Scoops.
My son loves tostadas, you buy the the shells (if you have a Mexican store nearby, buy the brand “El Milagro” they’re crunchiest I’ve tried), spread refried beans on the shell, add shredded chicken (in Mexico they use many toppings, including ham) and cover with shredded lettuce, cream and cheese. If you want to add spice to it, add salsa or pickled jalapeños.
The Flautas suggested by Momy of 2 are a great idea, but I must add that you make them with corn tortillas and to be able to roll them easier, you dip the cold tortilla in hot oil so it softens. You serve them covered with lettuce, cream and cheese (its hard to find cotija cheese, so just use Mexican shredded or if you find shredded Chihuaha in like Costco, it would work.)
Quesadillas are also a great idea for picky eaters, and in addition to of course, the cheese, you can fill them up with refried beans, sautéed vegetables like peppers, onions and mushrooms, chicken, steak, pork, etc. For this you would be better off with Flour tortillas, and there are small sized ones, not necessarily the burrito size.

Cinnamon Tortilla Chips
Cut up a few tortillas into strips. Toss them in melted butter and sprinkle w/sugar and cinnamon. Lay on cookie sheet and bake 350 for 5-10 mins (watch them carefully). Serve in a sombrero w/the rim folded up to avoid spillage.
Fiesta!
