Meatloaf, pot roast, lasagna, baked spaghetti are all easy. Pot roast can be a bit pricey to make though. They all hold up well for a couple of days or even to be frozen though.
My friend is pregnant with her 5th child. After baby's born, (in a couple of weeks) I want to make her a meal that is easy for her or her other kids or husband to re-heat. Something I can make on day one, refridgerate, and take to her on day two, yet it still tastes great when she re-heats is on day two or three. I was thinking soup. But the weather's so hot right now. Don't know if soup is appropriate. Also, I don't have a great soup recipe with chicken. I had a sausage one, but she said her kids would prefer chicken. I have a taco soup recipe (ground beef) but she has that same recipe. I'd rather do something new but tasty for her and the kiddos. Ideas?
(I am not good at enchiladas. She says her kids will pick out the ingredients they don't like. One doesn't like tomatoes. She doesn't like spicy. Her other 4 kids are ages 3-11yrs. I don't want anything too weird for the kids. Otherwise - what's the point? I'm trying to ease her life, not make her have to cook a second meal to please the kids). THANKS IN ADVANCE!
Anything else you mommies just LOVED that your friends and family did for you after baby came? I don't have a lot of money, but want to help where I can. 5 kids is a handful! (two at home, 3 at school).

I make a mexican casserole that is really easy and heats up great -
It takes a can on mild rotel tomatoes - drained
1 lb ground beef - browned and seasoned with salt, pepper, cumin to taste
2 cups of rice (I cook mine is a rice cooker so I dont have to watch it)
and cheese or choice - shredded
you can make it stove top and then place it in a casserole dish to deliver and serve. - My daughter, nieces and nephew absolutely love it. I normally make some cornbread to go with it and top it with a dollup of sour cream when serving it per person.

Another easy recipe my better half calls cowboy stew -
1 Lb ground beef, cooked & drained
1 – 28oz can kidney beans*
1 – 28 oz can dice tomatoes*
1 – 14 oz can corn * (*DO NOT drain liquid)
Add all ingredients into the pot and cover. Add 1-2 packets of taco
Seasoning or 1 pkg. HGP Southwestern Chipotle dip mix and stir. Cook in
Microwave for 20 minutes. Serve with sour cream, cheese and corn chips.
My stepsons absolutely love this along with their father - it is easy and delicious - again - cornbread is a wonderful side - top with cheese and sour cream and its a winner for all kids that I know
My go to meal for new mommies is baked ziti. I bring it over, a bag salad and some garlic bread. Kids and grownups like it a lot. I leave the onions out for the kids.

This is our favorite ziti recipe. It makes quite a bit. I always put it together the day before. Then the day of the party I just throw it in the over before quests come over. It is always a hit and it always turns out great!

Meatballs and sauce! And a few dozen buns. That will go far. She (or whoever) can always whip up some plain pasta AND they can have meatball sandwiches. You could always include a green salad.
Bring them taco fixings. Cooked chicken, fresh veggies, cheese, tortilla's, beans and rice. Easy peasy. My kids are not picky eaters, but none of us really like to eat casserole's. And tater tot casserole is nasty. Just sayin'.
tater tot casserole
2 lb raw hamburger
family size can of cream of mushroom soup
2 lb bag of frozen tater tots
press raw hamburger in the bottom of a large casserole dish. spread COM soup on top. layer tater tots on top of soup. bake in oven at 350 for an hour and half or until hamburger is cooked thru.
adults and kids LOVE this!
