When I'm out of ideas, I just take pieces of ham or turkey, wrap them in a slice of cheese and slice them into pinwheels. They go great with some fruit.
Another idea...my daughter loves spinach balls (with stuffing and whatnot), so I make a batch of them and give her some fresh ones from the oven. The others I freeze and then pop them out of the freezer as I need them and stick them in the oven. (PM me if you want the recipe).
There's the old cheese-sandwich standby (and you can slip a piece of turkey in and make it a little more protein rich).
Hope this helps!
I'll be reading for more ideas too!

Canned deviled ham with cheese and spread it on the bread and grill it as a grilled cheese sandwich. You can use chicken, tuna or any canned meat.

I love my daughters therapists as they are always giving me great ideas for eating.

Mac n cheese. Pb and j's (unless their is allergies to pnut butter), grilled cheese sandwiches. You can always do yogurt and a piece of fruit cut up of course.

LEFT-OVER'S. Toddlers can eat everything and some are willing to try anything. just make it into small bites so they won't choke (they can gum it to death if they have no teeth) This is the PERFECT time to introduce foods. Purchase 1 item in the produce (1 kiwi, 1 green pepper, 1 papaya, etc.) Experiment, if they don't like it... try again in the future. Frozen peas are GREAT!! keep them frozen and put them on their plate, this will help with fine motor and the coldness with help with sore gums. OHH!!!when you serve spaghetti... take all their clothes off, it makes cleaning them up easier.

HAVE FUN!!!
