Looking for Good Waffle Recipes

We just got a good waffle iron and are interested in tried and true best loved recipes.
Would love to find one that uses some wheat flour and apples and cinnamon!
We have tried a basic waffle that has both all purpose and wheat flour for our everyday waffles, and I tried a chocolate waffle recipe today that was very good. I like tried and true recipes so I don't have to have trial runs that turn out crummy = )

This is my basic waffle recipe:

* 1¾ cups all-purpose flour
* 2 tsp baking powder
* ½ tsp salt
* 1 Tbsp granulated sugar
* 3 eggs
* 1¾ cups whole milk
* ½ cup vegtable oil
* ½ tsp pure vanilla extract (optional)

Then I play with different syrups and toppings, or adding things in. I've done banana waffles, chocolate waffles, bacon waffles (huge hit!) and so many more. We call Sundays "Waffle Sunday" in our house. Every Sunday hubby and I wake up and I make waffles while he makes bacon and sausage. The kids love it.

This is going the opposite of healthy, but you can use cake batter to make dessert waffles!
I just made waffles this morning with sliced bananas, blackberries, and whipped cream.
I always add vanilla and cinnamon to a basic waffle recipe for more flavor.

I use this recipe from food network:

Except... I add 1 tsp of vanilla and instead of the 1/4 cup of oil I use 1/4 cup of chunky homemade applesauce. They're filling and flavorful, but not super-crisp, if that's what you're looking for. Leftovers freeze beautifully.
