I took fencing lessons at Lone Star fencing through a local rec center many years ago and I would recommend them.
My daughter wants to do fencing I don't know where she got this from but I always my children to explore other worlds. Please let me know.

There is a fencing school in Plano at Spring Creek and Custer Rd. I think the name is Lonestar Fencing. My friend's son takes classes there and are very happy.

My hubby's friends all fenced throughout school and into the junior olympics. They did it through St. Marks, so you could call them to find out who does it. But there are also private groups like Dallas Fencers Club off of Midway I think, Fencing Institue of Texas, etc. Just google it and you should find some. But I think that a really good place to start would be the Saint Marks Fencing...they should be able to give you info on who to contact, etc.
I am not sure if they are still open, but there used to be a place at the North East corner of Spring Creek and Custer in Plano. I hope this helps. Good luck!
My son has taken fencing lessons through Plano Parks and Rec. It would be a good taste of what it's like before you have to purchase the safety equipment.

I didn't see on their site where they have fencing, maybe they just don't advertise. A friend's son takes fencing from there.
