Knock-your-socks-off Recipes

I'd like to try a couple new recipes while my in-laws visit over the week of Christmas, because my MIL and I both love to cook and I'll be able to learn a couple things. And the kiddos will be busy playing with Daddy and Grandpa, so I can actually focus on cooking. :)

So for all the cooks/chefs/Food Network fans, what is your all-time-favorite recipe? I'd like something semi-challenging, and we have no real time constraints, although I probably won't be able to do any multi-day prep (like a sourdough starter).

What can I do next?

Greek Lemon Chicken and Potatoes

Chicken pieces skin on or off (pork tenderloin works too)
Potatoes, peeled and wedged
Garlic slivered
3/4 cup chicken broth
1/2 cup lemon juice
1/2 cup olive oil
Greek seasoning (oregano, mint, pepper) to taste
Put chicken, potatoes and garlic in roasting pan. Pour chicken broth over top. Mix lemon juice, olive oil and seasonings and pour over top. Bake at 350 for 1 1/2 hours.

ETA: I didn't really read the "recipe" part, so the following message might not be very helpful. But maybe it will spark some ideas?

-------------
If I were going to go all out, I'd like to do some of the following:

Some sort of lamb stew
Bolognese (beef/pork is fine but duck or guanciale is super good)
Fresh pasta (ravioli, lasagna, noodles, ...)
Roast chicken
I'd love to try a beef wellington at some point
Duck breasts with a sauce
Seared scallops
I want to try Jaime Oliver's chicken cooked in lemons and milk. Or Marcella Hazan's pork cooked in milk.

Most of those aren't kiddo food, though, so it will be years before I get to cook any of them again.

For baking, maybe a buche de noel? They are fun, fancy, and yummy. It's a christmas tradition in our house. I use a recipe from Rose Levy Berenbaum's The Cake Bible.

My favorite semi fancy thing to do is pecan chicken
You need:
Boneless skinless chicken breasts
Dijon mustard
Butter
Pecans
Sour cream

Pound the chicken flat or cut into thin slices, dip into melted butter and some dijon mustard and roll in pecans, you might have to press them into the chicken a little to make them stick. Saute in butter until chicken is cooked through. Remove from pan and while pan is still hot put 1/4 cup sour cream and about a tablespoon of mustard in pan and whisk, use this as sauce for the chicken. Serve with white rice.
