Ideas for Easy Vegetarian Meals...

I'm convinced that my morning sickness progressively gets worth with each child (maybe it's because I'm getting older??). I don't know...but after throwing up after eating meat a few times this week...I have decided that I would most definitely rather NOT repeat that anytime soon! So...I'm going vegetarian...at least until the morning sickness goes away! This isn't a big deal for the kids...my almost-8-year-old daughter is already a tofu-eating-bean-loving self proclaimed 'mostly' vegetarian....I think my husband will miss the meat if it doesn't have potatoes or beans...or something else 'filling'. My only request is that they be easy to prepare...anything that takes to long...just doesn't work with my constantly-barfing-totally-warn-out body right now. Suggestions??

So What Happened?

Thanks so much for all the ideas! It's not so much that I just crave a vegetarian diet (which I do...)...but I really have BAD morning sickness. Every pregnancy I've lost at least 15-20 pounds by the time I hit the beginning of the second trimester...then it eases a TAD and I lose a little more before I finally start gaining...usually around 5-6 months...then I struggle again the last month. I just can't stomach cooking with meat. If my husband leaves the tuna cans in the sink without rinsing them...there goes lunch. I spend the whole day swallowing and trying to avoid anything that will push it over the edge. I wish I could just 'eat my salad' and cook the same for everybody else! I just keep telling myself...it's only a few months...there are so many women who would give anything to be able to get pregnant...I should be grateful. Anyway...here's to hoping the time goes by fast! (Ha! Does that EVER happen in pregnancy??)

The only ones of these that take longer than half an hour are the baked ones, and that's just bake time. For meat loving dad... just keep a few flavors of sausages and brats in the freezer. When he want meat-meat-meat... just defrost and throw 2 in the pot or in the oven. Ditto some fully cooked chicken burgers, and some fully cooked meatloaf slices, bacon slices, sausage crumbles... all are ready to go with no thought. Just heat up some meat for him to go with whatever else you're making.

Baked Potatoes
Pasta (dozens and dozens of types... most basically red sauce, pesto - basil or roasted red pepper-, cream sauce... boil, bake, or stuffed.
Gnochi
Eggplant Parm
Stuffed peppers
Stuffed mushrooms
Stuffed 8ball zukes or Stuffed Eggplant
Asian Noodle salad (I like somen salad, myself)
Curries (my fav are tomato curries and coconut curries)
Burritos
Shishkabab
Gyros w/ falafel instead of lamb/beef
Risotto (get someone else to stir!)
Polenta
Cannelini beans + red onions + olive oil + salt spooned over bread
Hummus & Pita
Grilled Cheese & Tomato soup
Belgin waffles w/ strawberries
White or red Chili
Enchiladas
Tempura
Tostones and Guacamole
Pear & Bleu Cheese Tart
Soups by the gallon w/ crusty bread
Foccacia Sammies (fresh mozz, roasted red peppers, spinach, & pesto or garlic mayo comes readily to mind)

There's a cookbook called "Fresh from the Vegetarian Slow Cooker" that I use a lot. The recipes are easy, like most slow cooker recipes, and filling. Lots of stews and soups.

There's no point in fixing 2 meals if you can satisfy the whole family with one.

Vegetarian Chilli and hearty soups/stews heavy on filling things like beans and barley

Pasta dishes heavy on the cheese and veggies-- use the high protein/high fiber pastas to make it even more filling

Mexican! Very easy to adapt any Mexican recipe-- leave out the meat, increase the beans and cheese.... not to mention things like Taco's and salads where you put the fixin's on the table and let everyone do their own

Home Made pizza!! So easy to let every one top their own part or do minis

When I was pregnant with my son... ALL I CRAVED FOR MONTHS, were salads. Morning, noon, and night and anytime in between. Salads are all I ate.
And interestingly... my son, even if he is a picky eater... LOVES salad, too.
Anyway, I ate my salads and still cooked as usual for my family.
But I ate, salads.
I didn't make them eat like a rabbit just because I was or craving that all the time.

For morning sickness.. I had that PLUS migraines everyday. The only thing that helped me, was per my OB/GYN... and that was Acupuncture.
Just one session for 1/2 hour, and it was gone.
It is very relaxing and does not hurt.

Black bean burgers. I'm not a vegetarian but I love these!

1/3 cup instant oats
1 tsp onion powder
1 tsp garlic powder
1 tbsp yellow mustard
2 tbsp ketchup
15 oz black beans, drained and rinsed

Preheat oven to 400
Mash black beans in mixing bowl with a fork until mostly pureed, but leaving some bean parts. Stir in spices and condiments. Then mix in oats. Divide into 4 equal portions. Shape into 4 thin patties. Bake for 7 minutes, flip over and bake another 7 minutes.

The recipe says to serve them on a bun, but I like them with a whole wheat tortilla instead.

personal Favorite takes about 5 minutes to prepare and toss in the oven and the kids love it!
