I Need Some Creative Quinoa Recipes!

I recently started cooking with quinoa and I love it! Problem is, I keep making the same few dishes over and over... quinoa with fish and steamed veggies... quinoa with grilled chicken and peppers... quinoa salad with lemon and herbs.

I want to mix things up! Does anyone have any awesome quinoa recipes I can try??

Cat - that sounds great! I never thought of having quinoa AND rice in one dish! This may be on the menu tomorrow, thanks!

Hi alien-

I 'toast' my quinoa...

I throw it on a moderately hot cast iron pan...and toast it til it is popping like popcorn...then...as the popping slows...I add some butter...and take it off the heat.

I MOST often use this in a rice pilaf.

I throw it in as I am cooking the rice...then add sauted veggies...and at the end fresh parsley and some THIN sliced green onions...maybe some fresh finely chopped rosemary...

YUM...

I have used quinoa as a substitute for bulgar in tabbouleh. Love it.
I keep my tabbouleh very simple, as I don't care for mint and can't do green onions:

Cook up a half cup quinoa in one cup water. Let cool.
1.5 cups of coarsely chopped Italian parsley
Mix together. Drizzle olive oil over this, then add in juice of one lemon, 1-2 teaspoons dried dill (probably 2 + if chopped fresh), salt and pepper. Mix again, adjust ingredients to taste.

I then serve chopped, ripe tomatoes separately. This way, if you have leftover tabbouleh, the tomato won't throw the taste off. (also, my son likes the rest of it but dislikes tomatoes. this way, everyone wins.)

My kids like it when we make it and add some black beans and sliced smoked sausage. We add a little cilantro from our garden. My son asked if we could add corn next time, so we will try that.

I've made Tabouleh for years with quinoa.

We also cook it for breakfast and add dried fruits, splash of milk & butter.

My sister makes Quinoa for breakfast with a little raw sugar and fresh berries.

I make Quinoa and add it to a brushetta instead of eating it on bread.

I make a Mexican Quinoa salad. Add tomato, cilantro, black beans, finely chopped onion, some olive oil and lots of fresh lemon or lime. When I'm ready to serve it I add diced avacodo. You can eat as is or make it a dip and serve with tortillas.
