The easiest frosting is confectioners sugar, butter and a little vanilla. Then add whatever flab=vor you want - melted bakers chocolate, a tsp lemon juice & a Tbl zest, the same for orange, etc. Add food coloring as desired.
2 sticks unsalted butter, 3-4 cups sifted confectioners sugar, 1 Tbl vanilla - upto 4 Tbl milk or cream. Use soften butter - beat, add sugar on slow speed so it doesn't end up all over you and yoru kitchen - add vanilla. for stiffer frosting use less milk, for glossier frosting use more milk.
For chocoalte add 2 - 4 squares unweetened bakers chocolate (adjust sugar for taste)
For lemon - add a Teaspoon of fresh lemon juice and a Tablespoon of lemon zest.
For cake I follow the recipe in my Betty Crocker cookbook and adjust for the falvor (lemon, vanilla, chocoalte, etc.) the cupcakes that went over the biggest were the lemon ones that were just a fluke. I added soem fresh lemon juice and zest to both the cake recipe as well as the frosting and eveyone loved them. I think it was fresh tasting - a good option for

I personally like cupcakes better than cake as they're easier to frost and I have this cupcake stand I got at Target years ago. I use a pastry bag - but use a large plain round tip and the frosting kind of looks like a dairyqueen ice cream dish - a simple swirl.
