Healthy, Easy Dinner Ideas

Ok moms! I need some help. My husband and I recently started a life-style change (I don't say diet, because this is something more than just losing weight, we want to set a good example for our children and also live longer and healtier). The main problem is that I am a horrible cook. In the years since we have been married I have tried to learn as much as I can, but if it is too complicated, I just can't pull it off w/out burning it or something. Most of what I know how to cook is casseroles, boxes of rice and steamed veggies. I have upgraded from hamburger helper which is all we ate for abot 2 years! I also work full time, and don't get home until around 6ish. So it is important that the meals be quick to prepare and cook (even better if they can be prepared the night before). I also only get the grocery store about once every 2 weeks. Sometimes weekly, but usually just for milk and bread. So in a nut shell here is what I need: recipes that are healthy, easy to prepare and don't have alot of exotic ingrediants. Also, my husband is allergic to nuts and fish. Links to websites you use are great. Thanks for all your ideas and help in advance!

Go to Kraftsfoods.com or Campbells.com both sites are incredible offering up very healthy and easy meals. Most of the ingredients you may have on hand.
You don't have to be a good cook to follow a recipe!! :)
You will have to go to the store more frequently though, introducing salads, fresh veggies and fresh fruits into your meals and snacks is essential to turning a new leaf. Produce has to be bought every five days for it to be fresh.
You can do so many things, like easy breezy quesidillas, get a rotesserie chicken already cooked at the store too, I do this as I like to cook but not in the summer! You can do so much that is easy but need to go to the store and make sure you are stocked up on easy options that are fast. Keep spaghetti sauce and noodles stocked up, neither goes bad fast and easy to keep on hand.
On Sundays, take two hours, prepare three or four meals, put two in the freezer, use the first two and on the second day put out the ones in the freezer to thaw in the fridge.
I write out my meal plans for the week ahead on Saturday, get coupons and shop on Sunday and then have it one hand, know ahead of time what I am cooking too. Good luck, you will do great! I even get frozen California Pizza Kitchen Pizzas as Friday is pizza night. I add a salad or cut up fresh veggies and in 10 minutes you have a meal.

I wanted to suggest using a slow cooker. The meals are easy, and delicious, and everything is ready when you get home. There are tons of recipe ideas online or in cookbooks, just look around.
Slow cookers also require a little planning which will help you stick to your plan. Try cutting up the veggies on the weekend or the night before, so in the mornings all you have to do is throw everything together before you head off to work.
I like using slow cookers because I hardly ever ruin the meal. I usually burn something on the stove because I am not paying enough attention. But it takes a lot of effort to burn something in a slow cooker. So you will be able to learn more about cooking and gain more confidence in your cooking ability as you use a slow cooker.

Good for you! I did the same thing two years ago, and you won't regret it! Here's one of my fabulous comfort food easy super healthy recipies.

Put a can of pinto bean, and a can of red beans (or really any kind of beans you like) in a pot, juice and all. Add about a cup of Salsa, and a tbs or so of chili poweder. Cook until the beans are soft, about 15 minutes? Oh, and use low to medium heat so the beans don't stick to the bottom of the pot. Serve over cooked brown rice (definently invest in a rice cooker-SO easy and perfect every time!). If you're feeling really daring, add in to the beans while they're cooking some turkey sausage or some all naurtal sausage of any kind (Costco or Boise Co Op, I've found a few at Winco). I use www.recipezaar.com and www.allrecipes.com if I am looking for something new. Also, invest in a slow cooker, if you don't already have one. It is a life saver! It would be really great for you, since you are still working; when I was working I used mine at least three times a week. It was nice to come home and not have to worry about what to cook for dinner since it was already done! That being said, I have a lot of recipes that are quick and easy slow cooker meals. I get cooked squash in boxes from the freezer section and pop them in the micro with a little honey.

Look for a mix from Near East for Taboule. It should be with the other mix dinners. Get flax oil from GNC and use that with lemon juice and tomatoes. High lignan flax seed oil has tons of omega 3's, which your husband especially needs to get since he can't eat fish. My husband actually drinks it and it helps with his inflammation. I get it at drugstore.com. He also tells me that when I am craving sweets or fatty foods it means omega 3's are low, so get some oil.

I make a simple salad of baby spinach and cut strawberries with bleu cheese dressing. My husband loved it.

I like to get a spice cake mix and mix in at least two cups of all natural applesauce. You can skip the oil, and the cake turns out more like a pudding.

I started out really slow with cooking, for health reasons we try to go without a lot of milk or meat, and my husband can't have corn, broccoli, pork, or very much wheat. I don't always cook a full meal, I just make sure everyone gets enough. Raw vegetables and fruits are great too. Try raw pears, raw beets grated on a salad, etc.

I am always reading articles on msn.com and often they have good ones like "top ten foods you should eat", etc. This is a great way to become aware a little at a time.

When you do go shopping, look for things that do not have high fructose corn syrup, or corn syrup at all. this is tough. Aspen Mills for example, makes a bread with whole wheat and honey, no sugar at all. It tastes wonderful and my grocer was happy to order it in, even in this tiny little town. They are located in Ogden, UT. At that I try to limit the amount of yeasted bread I take in.

Grow as much food as you can.

I use www.SavingDinner.com and love it. They have a 'body clutter' menu (and menu mailers) that give you a grocery list (split up by store sections) and all of the nutritional content. They are GREAT meals, a lot of them don't take a lot of time, and I just can't say enough about them!
