You could make a carrot cake. Those are usually healthier. I am an excericise health nut but even I eat cake on my birthday. It sounds like you are a skilled baker. I would make something fantastic!!!
My baby's first birthday party is coming up this Saturday, and I'm looking for a healthy (but still yummy!) recipe for a small cake for her to eat (OK, so most of it will probably end up on her face, but she'll still eat a little of it, I'm sure!) I'm ordering a sheet cake from Harris Teeter for the grownups, but I was wanting to make the little cake for my daughter myself, so I can control what goes into it. I've managed to keep her away from all the super-sugary processed foods until now, and I don't see why she should ingest a ton of sugar just because she's one! I've seen healthy cake recipes posted on this site before, but I can't seem to find those postings, so mamas, please send me your best yummy recipes!

Do you have a copy of the "What to expect the first year book?" There is a tasty and healthy recipe for pumpkin muffins in the back of the book. I've discovered that little ones can handle muffins and cupcakes much easier than a piece of cake. Happy baking!
I modify the Carrot cake recipe in "Joy of cooking".
It is an oil based cake, so it is always moist, it is dairy free (if that is a concern) you can add flax meal, substitute 1/2 the white flour for whole wheat. Add nuts & raisins if that's your thing. I cut the sugar, too - by up to half.
Then you don't have to feel the least bit guilty about the cream cheese & butter icing! (ha ha)
I have made this cake countless times & always get rave reviews!

A friend of mine took strawberry cream cheese and mixed plain whipping cream in, formed it into a cake and put some more whipping cream on top withsome fruit and he loved it! That is only if your child is not allergic to dairy. You could modify a cake recipe by using whole wheat pastery flour, coconut oil, agave syrup and so forth. Or search for vegan or raw food cakes. There are plenty out there! Good luck and have fun!
If you are good at improvising here is a link to an example I found on the web researching for my son's 1st birthday coming soon. I thought it sounded crazy, but then saw the picture. A beautiful little cake, but it is bread with mozzarella and cream cheese frosting!

Hey C.,
Congrats on your daughters big day! Here's a very simple recipe you can use. Tear up angel food cake into small chunks and get some fresh strawberries and slice them. If you have one of those small bundt pans that would work great. Mix berries with some chunks of cake and press into the pan. Then freeze. once frozen, turn out on a plate and top it with some strawberry yogert. Let it soften just a bit before you give it to her, but not so much that it falls apart. Have fun!

Believe it or not, I did almost exactly what Terrie did. Angel Food Cake with Strawberries and Whipped Cream so that I could control the sugar. He loved it! You guys have fun on this wonderful day.
I made a banana bread "cake" for my daughter's 1st b-day. The recipe I used is more like cake in consistency than what you'd typically think of banana bread (i.e. crumbly and dry). I used whole wheat flour instead of bleached flour (and I'm sure I probably cut way back on the sugar, too) and it tasted great. If you're interested in the recipe, let me know and I can e-mail it to you. I realize banana bread isn't the most popular choice for birthday cake, but children/babies seem to have a natural affinity for bananas anyway! My daughter loved it!
I found some recipes for cakes that called for soy flour and some were egg-free. They still had a little sugar added, but really I think just stay away from cakes with eggs or honey added. I got so frustrated with trying to make the perfect cake that I ended up just getting my little guy a clown cone from Baskin Robbins. He didn't like the icing cause it was too sweet and didn't like the ice cream cause it was too cold, all he ate was the cone!
We did a strawberry short cake for my daughter's 1st b-day. I did use a premade cake bottom but used fresh strawberries and made my own whipped cream. She loved it and it was a little healthier.
Hi there! Happy Birthday to your little girl! There is a neat website called: http://www.wholesomebabyfood.com/ They have neat recipes in general and some helpful suggestions for birthday cakes for your little girl.
As far as the cakes for the adults, may I suggest, and you don't have to take me up on this offer, but take a look at my website and blog, I make cakes. I'm a stay at home mom with two kids and I have started my own cake business. I've made shower cakes, birthday cakes, and I've got three wedding cakes on my calendar over the next few months. If you're interested, and if you live close by. I live in Stallings, right outside of Matthews.
Harris Teeter cakes are good, but they are not made there, all frozen, icing an all. They are defrosted and "decorated" to your choice in the store. You don't have to take me up on my offer, but just thought you'd like to have an option if you wanted to. Also, I would make a healthier version of your daughter's first cake if you'd like.

(Harris Teeter does offer a free first birthday cake if you order in advance, not sure of the details.)
Thanks!
