Healthy Birthday Cake for First Birthday

My daughter is turning one next week. She was born a micro-preemie, (is very healthy and doing GREAT now), so according to her "adjusted age" is more like a baby turning 9 months. I would still like to celebrate her "real" day, and am looking for a cake that would be a little lower in sugar, and fairly easy to digest. She does not have any teeth yet, so she would really just be getting a few small tastes of whatever I end up making.

I started making carrot cake (with pineapple and applesauce) for my daughter when she turned one and it's still her favorite for her b-day, 8 years later. This is a similar recipe to what I make. I would cut down on the sugar though if you put the cream cheese icing on.

I know a friend of mine recently served a "banana bread cake". I think she bought it from the Deerfield Bakery. It was quite good.

If you just wanted to have something special for your daughter, you can just make her a "smash cake" of banana bread (perhaps with cream cheese icing). We did that for each of my kids. It was very entertaining to let them smash it, lick it and overall make a mess. Luckily I had my mom and mother in law serving the other cake and ice cream for everyone else, while my husband and I video taped and enjoied watching our kid "have" their first cake. We've watched the video over and over and it's really priceless. So that's my suggestion.

The "What to Expect: The Toddler Years" has some recipes in the back of it. One is an apple cake that I heard is very good. There is also a "chocolate milk" cake in there. Both are made with juice concentrates, not actual sugar. If you don't have the book and are interested in the recipes, you can send me a message or check it out at the library. Hi Stephanie, my daughter just turned 1 and we got her a special smash cake and it was a Strawberry shortcake cake like at Jewel one of the small ones and they wrote on it... She didn't even eat a lot of it anyway :) Good luck!
