Hi ladies,

For my monthly team meeting in December we're doing a cookie exchange, and I know two of the girls have gluten allergies. Do any of you ladies have recipes for Christmas treats without gluten? (I know nothing about gluten, so any help is greatly appreciated!) I'd like to bring an array of choices, so everyone can be involved. Also, if you have recipes for candies and other treats, I'm all ears! I LOVE baking for Christmas! :) Thanks a ton!

I found a website a few years ago that I use to pull up all kinds of fun christmas recipes and games and ideas for kids. It is called northpole.com I now they have some Gluten Free recipes, but probably not many. Anyway, other fun recipes there that you can use and enjoy!

J. - you didn't say when your exchange was going to be, but if it you can do pre-baked, there's an awesome store in Savage called UBake. You can find them online, but I don't know if you can order on line or not. They have a few gluten free cookie doughs, along with other gf products. I don't have any recipes for you, but you could also check to see if Barnes and Noble has gf baking books. Good luck!

Hi J.,
I like the quick and easy gluten free cooking cook book. Most any recipe can be Gluten free with gluten free flour. Add about 1/2 teaspoon xanthum gum to every cup of Gluten Free flour. Roll cookies are tricky but most others are fine.

Our local Woodman's grocery store has a health food aisle and they now carry a variety of gluten-free mixes for cakes and stuff. Maybe a store near you has the same?

Hello J.. I have gluten and starch sensitivities. I made these molassess cookies and thought they were pretty good.
1/2 cup molasses a little less then
3/4 cup of honey 1/2 cup butter
1 cup kamut flour (order on line or find in health food section of store)
3 1/4 cup quinao flour (order online of find in health food)
1/2 cup of shortening
2 eggs
1/2 tsp aslt
2 1/4 tsp baking soda
2 1/2 tsp ginger
1 1/2 tsp cinnamon
1 1/2 tsp cloves
mix all ingredients and chill dough
roll into balls flatten and bake at 350 F. for 10 min

Frosting
mix honey
butter
vanilla
into a large enough white consistency. I think cookies are excellent with out frosting.
I also really like www.tropicaltraditions.com Coconut flour is my favorite.

My daughter is gluten free and honestly, I don't give her food that other people have baked in a setting like that unless it's on a separate tray with a gluten free label and the list of ingredients next to it. Nothing against you, it's just that parents with gluten-free kids are REALLY cautious. You also have to find out why they are gluten free. If the have celiac, sometimes they can't eat gluten-free products that even share a kitchen with regular cooking, they are that "allergic" to gluten. Just some thing to think about.

Baking with gluten-free ingredients are for the most part expensive so here's a recipe that doesn't require special flours etc... But, you can't have any peanut allergies in the room for this one either.

Peanut Butter Truffle
1 cup creamy gluten free, casin free peanut butter
1 cup light brown sugar
1 large egg
1 tsp baking soda
1/2 cup gluten free, casin free semisweet chocolate chips

Preheat oven to 350. Cream together all the ingredients, except the chocolate chips, with a wooden spoon. The add chocolate chips. Drop rounded spoonfuls onto a greased cookie sheet. Bake for 9 minutes. Cool for 5 minutes before removing.

Be sure to read the labels of all the ingredients. I would also ask if they are off of casin and soy as well as gluten. If they are kids on the autism spectrum, they are off many things, not just gluten. Some kids can't even have the egg.

You could try the gluten free pretzels and top them with a rolo, then bake for about 4 min. at 250 just until the rolo starts to melt then remove from oven and press a half pecan on top. We make these with regular pretzels and they are delicious. I haven't tried gluten free yet. Our favorite gluten free pretzels come in a red bag, the brand name escapes me. You can find them at natural food stores. Good luck!
