I agree with starting with white fish to get used to it. I am not fond of fish at all but I do make salmon because my hubby and daughter like it.
I either marinate it in Italian dressing, little olive oil and little lemon juice and grill it OR
Salmon baked in foil... large piece of foil, spray a little pam on the foil, place salmon skin down. In separate bowl, dice tomatoes (you can use canned diced tomatoes, drained), add chopped shallots, garlic, little lemon juice, little oil, Italian seasonings. I don't measure anything, I just know what our family likes so I suit it to their taste.
Put tomato mixture on top of salmon, close the foil into a pouch type packet. This can all be done up to 6 hours before you cook it. If you do this, the flavors sink in better too... Bake at 400 for about 30 minutes.
I servie it with rice. When I make my rice, I either cook it in tomato juice or I add lipton instant veggie soup mix to the water and then cook rice in it.
I can eat these 2 fish dishes.
