O....M....Goodness!! I just made a PHENOMENAL stuffing (using up last winter's frozen turkey).

I have never even tried to make stuffing before but I found a really easy and great recipe on the Atkins website, and i literally just ate almost all of it. I didn't even save room for turkey, and only managed to save about 1/4 cup for my poor hubby ;-)

It wasTurkey with Italian Sausage Stuffing (if you'd like to try it,, look on the Atkins recipe list.) The recipe calls for mild Italian sausage, removed from the casing, but I only had Sicilian (which is pretty spicy), and it was SOOOO good!

Anyone want to share your recipe??

What can I do next?

I brown ground sausage then put aside. (i think it is bob evens, white tube) I sautee (sp?) chopped onions and celery in butter (in the pan that i cooked sausage). I add salt, pepper and bell seasoning. In a large pot i combine fresh bread cubes, the sausage and the onion/celery mixture. Whatever is left over from stuffing turkey goes into baking dish. I pour thin gravy or stock over and bake. Yum!!

Sounds wonderful! My family legacy is to make stove top... but for the past couple of years I have tried my hand at replicating my MIL's fantastic homemade dressing!! It's a few pans of homemade cornbread, shredded chicken pieces & some liquid stock (boil a whole chicken for the meat & stock), celery (with "strings" removed b/c hubby doesn't like them... she did this for her hubby & the kids who were/are picky eaters), sage, other spices... hmm... I think I need to get the recipe again, because I can't remember what else goes in there... I think it's really just a traditional southern cornbread dressing, but oh, so yummy!!

LOL... I make sooooo many things from scratch.

Stuffing is not one of them.

Stovetop chicken or turkey or cornbread (depending on my mood) w/ hardboiled egg, celery if it's cornbread, and cream gravy. I could eat that 3 meals a day. And a few times a year... do!

Honestly, I love Stove Top, and I'm not a big 'packaged' fan. I have made and had tried dozens of homemade stuffings, and they are always so bland and soggy to me... Just haven't found the right one I guess. Will have to try ya'lls suggestions.
