First thing to the woman who went there last year for the Medical Assisting program and is still unemployed...are you still actively working with career services? They are there for anyone who has graduated the program and they work with you for life once you are an alumni. I encourage you to call them so they can take a look at your resume and help you set up for interviews.
A school like Everest is perfect for someone who does not want or does not have the time to spend 2 or more years in school. Not everyone is cut out for a traditional school where you sit in a lecture room with 100+ other students and never meet their teacher face to face. Everest is a very hands on school that has small class sizes. My suggestion for you is to call your closest Everest and just take a tour. It is the best way for you to see whether or not it might be a good fit for you.
The students that tend to bad mouth their experience there are the ones that did not take it seriously (had poor attendence, grades, attitude...). Of course the school cannot promise employment, but they are accredited and they must meet specific placement standards (70% to be exact) and graduation standards.
