Does Anyone Have a Good Sweet Potato Recipe?

I love sweet potatoes and am looking for a nice recipe for Thanksgiving. I would appreciate any recipes that you have (casseroles, soufles (sp?) anything would work) Thanks,

I always get my recipes from Mollie Katzan, she's a vegetarian cook and owner of Moosewood Inn restaurant, writer of the Moosewood cookbook. Here's a very different way to make sweet potatos marinated and covered w/ steamed broccoli (served cold or at room temp -- it's really so good, make it in advance for yourself to try it out and/or perfect the ingredients to your taste, or decide you don't like it at all :)

Otherwise try Food Network, they have about 4000 really good sweet tato recipes w/ lots of butter and brown sugar! Happy Holidays!

Paula Dean has one that looks really good. You can find it on www.foodnetwork.com I have not made it but will for the holiday. It is mashed wrapped around a marshmallow to make a ball then rolled in coconut and baked. The Praline recipe looks really good too.

Hi A.,

We use an old old recipes from my great-gransmother that she used to cook on the heater (way back when).

Simple and all by taste.

Canned Sweet Potatoes (drained)
Brown Sugar
Real Butter

Melt about 4 T of butter & brown suger (1/2 bag) in a pan, let it carmelize a little add your potatoes. Let it cook. I let it cook for a while because we like ours a little more candied. We also like to have extra 'sauce' to put on the turkey.

Praline Sweet Potatoes

4 cups mashed sweet potatoes
1/2 cup white sugar
2 tablespoons vanilla extract
4 eggs, beaten
1/2 pint heavy cream
1/4 pound butter
1 cup packed brown sugar
1/2 cup all-purpose flour
1 1/4 cups chopped pecans

DIRECTIONS
Butter one 2 quart casserole dish. Preheat oven to 350 degrees F (175 degrees C).
In a mixing bowl, combine the sweet potatoes, sugar, vanilla extract, eggs and cream. Blend well, and spread evenly in casserole dish.
Prepare the topping by combining the butter, brown sugar, flour and pecans. Mix until crumbly, and sprinkle over sweet potato mixture.
Bake for 30 minutes in the preheated oven.
