I know this has been asked before but I need a recipe using chicken. I have 2 boneless, skinless breasts and 8 legs. All are frozen. There are 4 of us - hubby and one son are major eaters and other son and me - not so much. Does anyone have a recipe for a good casserole, soup, etc using chicken ? Maybe you can direct me to some of the questions asked before (I looked but didn't have much luck looking myself !) Oh - and the slow cooker isn't an option today - I am already at work !

This tastes soooo good:

Bread and lightly saute 8 THIN pcs chix on stovetop
Mix 2 T. of white cooking wine right in a lg jar of chix gravy--Stir well
On bottom of 9 inch glass dish--Put a few spoons of gravy
Place 1/2 of chix atop
Put a few more spoons of gravy over chix
Then, top w/ shredded mozzarella

Repeat layers like a lasagna

Bake in preheated oven - 350 degrees for 40 minutes
...Cover loosely

Keep some gravy aside for rice or noodles

My co worker taught me this one. Brown some sausage or bacon in a skillet. Then using that fat seat and brown chicken. Then pour tomato or broth or wine and your choice of herbs and spices, turn down to a simmer cook for about 20 minutes or until juices run clear. Enjoy.

Greek lemon chicken and potatoes. Throw the chicken in a large roaster with potatoes that have been peeled and quartered, and garlic to taste. Pour a cup of chicken broth over top. Wisk 1/2 cup of olive oil and 1/2 cup of lemon juice with some greek seasoning (oregano will work if you don't have the seasoning). Pour over the chicken and potatoes. Bake for about 1 hour 15 minutes at 400.

I made chicken and rice casserole last night. I just had 2 small boneless breasts. I put 1 cup of rice in a 2 qt casserole dish and set aside. In a small bowl, I mixed 1 and 1/2 cups of water, 1 can of cream of mushroom soup and 1 packet of instant onion soup mix. I mixed those ingredients together well and I did add about a teaspoon of chicken boullion powder.

When the liquid was well mixed, I poured it over the rice and stirred to blend together. Put chicken in the mixture on top, sprinkle with pepper and bake at 375 about an hour or until chicken is done.

Chicken Divan is also tasty and easy.

I don't have a set recipe. I just add this and that.

You precook the chicken and peel from bones. Steam a package of broccoli florets. Broccoli goes on bottom of casserole dish, chicken goes on top of broccoli. Sauce... 2 cans cream of chicken soup, 1/2 cup of milk, a large tablespoon scoop of mayo, touch of lemon juice, curry powder to taste shredded cheese. Mix all together well and cover the chicken and broccoli. Then, take about 1/2 cup of bread crumbs and shredded cheddar to taste and sprinkle on top. Bake about 350 until bubbly.

My in laws make a good chicken casserole it's boiled chicken taken off the bone and sshredded. Let it cool then steam a couple large heads of brocoli put the chicken on a large glass dish and p put brocoli on top mix a can or two of cream of chicken soup pour over top then top with shredded cheddar cheese you can probably add other veggies as well and we make rice to put under it after its been cooked it only needs to bake 20 or 30 minutes easy

This may not work for today as the cooking time is long, but this is a yummy chicken recipe to serve with rice and a veggie if you're looking for something another time! I've also done this in a crockpot for 8 hours or so.

Your Chicken
2 stalks celery slice 1/4 -1/2 in. thick
2 cups carrots sliced the same or 1 lb. baby carrots halved
1 sm. to med onion rough diced
3 cans chicken broth plus 5c. water and 6 cubes or tsp. chicken bouillon crystals
1 t. Italian seasoning
1 rounded t. minced garlic or 2 cloves fresh garlic
salt and pepper to taste.

Take your chicken and remove the skin from the legs.
Place in pot with the rest of the ingredients and cook until the chicken is done and the carrots are tender. Remove chicken and while you are cutting the breasts and boning the legs add any noodle you have on hand or if you are feeling really adventurous make homemade drop dumplings with bisquik. Add chicken meat back to pot and serve when noodles are cooked through or dumplings are done.

If you want to leave out the Italian seasoning you can. It's homemade, hearty and great for fall and winter, plus it makes a ton.

I cut up three colorful fresh bell peppers, and 1-2 onions, or I use the frozen, bagged onions and peppers from the store. I put them in a skillet with butter and Worchestershire sauce and some seasoning, like Jane's Crazy Mixed Up Salt and cook them very little. Then I place the chicken in the skillet with the vegetables and pour in more W. sauce and let it simmer until the chicken is done. Then I place slices of pepperjack cheese over each piece of chicken and let it melt. I almost forgot, I make rice too, so that when you serve the chicken and peppers, they will all sit on a bed of rice. It's very good.

Chicken Cacciatore
Put the chicken in a large, flat-ish casserole in the oven with onions, peppers, mushrooms and tomato sauce. Let that cook while you change your clothes, make a salad, get a pot of water on for pasta, etc. It will take about 45 min in the oven. Use large pieces of peppers, onions and mushrooms if your kids won't eat them - that way they're big enough to pick out. Use enough sauce to be able to scoop out for the pasta.

I love making Pan Roasted Chicken with potatoes and carrots.

Put some olive oil in a big skillet, and throw in your chicken. (add favorite seasonings if you like, I do) Brown it nicely, then throw in cut up pieces of potatoes, and carrots. Add some chicken broth or a bit of water (1/4 cup- 1/2 cup) and add a flavored bouillon cube.

Simmer all of this until potatoes and carrots are tender. Usually about 30 minutes or so.

Add bread, and a salad and you are good to go :)
