How do you travel with a homemade cheesecake? It was made last night using fresh strawberries. I need it to keep for at least two hours. There is no way to make the time shorter and I don't think I have enough time to properly freeze it and for it to thaw before I give it to the person. Will it turn to mush within that time? I am new to cheesecakes, so I have not a clue :P TIA

Maybe put it in the freezer 15 mintues before time to leave, just to get it good and cold and help it to firm up. Fill several ziploc bags with ice and lay them in the bottom of a small ice chest. Set the cheesecake on top and transport that way. Keeping the ice in leakproof bags will keep the cheesecake dry.

Argh, is there any way you could put the strawberries on after you get there? Or I guess remove them in transport.

If you don't keep it cool enough the water in the strawberries are going to turn it to mush.

Use a cooler. Put the strawberries on after you arrive at your destination for peak freshness.

Should be fine. Really. You're driving in an air conditioned car right? Not much different than having it out on the dessert table at your home. Strawberries will hold up fine.

I'm assuming the cheesecake is on a plate and not still in the pan - here's what I've done: get a bigger/deeper pan and fill it with ice (this is of course, if you don't have a cooler big enough); set a towel on top of the ice; this will help the cake stay put; set the cheesecake on top; cover tightly with foil without touching the cheesecake; you might need to use a few toothpicks to keep the foil off the cake; it will act like a little cooler and keep the cake nice and cool. Then anchor the whole thing in your car so it doesn't roll all over.

Just put it in the car right before you leave. I personally like most cakes to come to room temperature since it makes them more creamy. It will be fine.

Make sure your car is cool when you put it in there. If you can use a cooler, do that with some ice or freezer packs on the bottom. If you don't have a cooler, I would put it in a cardboard box on top of some freezer packs or gallon size baggies of ice.

If you put it in a cooler with some dry ice on the bottom, it might freeze during your travel time and should be fine when you get there.
Be careful with dry ice (wear gloves) so you don't freeze/burn yourself.
