Moms, I am needing a great-tasting, easy idea for breakfast Thanksgiving morning. It needs to feed 15 people (in-laws). A friend of mine has been chosen to do breakfast Thanksgiving morning for all of her in-laws that are in town. Does anyone have an easy breakfast casserole recipe, maybe something that can be fixed the night before and pop in the oven on Thanksgiving morning? Appreciate any ideas/recipies. Thanks.

BREAKFAST CASSEROLE
1 lb. sausage
8 eggs
2 c. milk
1 c. Bisquick
1/2 c. Monterey Jack cheese
1/2 c. Cheddar cheese
Cook sausage and drain well. Beat eggs, add milk and Bisquick. Spray a 9x13 dish with Pam. Layer sausage, sprinkle grated cheese on sausage. Strain egg mix over sausage. (Must strain or will be lumpy.*) Bake at 325 degrees for 50 minutes or until set.
*I do not strain mine, I just mix it well with a hand held mixer and it comes out fine. Don't want to chance it, strain at will.
I also use a cheddar/jack mix or use a colby jack mix and it works as well. I add onion (dried) to the egg mixture and season to taste.
You can make this the night before...cover with plastic wrap and keep in fridge. AND it reheats well too!
I also cook mine at 350 for less time.
I serve mine with Salsa.
My almost 2 yr old eats this.

Here is the one we do Christmas morning, it bakes while we open presents.
6 slices of white bread
10 eggs
2 cups of shredded cheese
1 cup milk
1 pound ground sausage, browned
1 package bacon, cooked crisp & crumbled
(You can do this with the sausage only, but we use both for special meals.)
Cook the sausage and bacon. Spray the bottom of a 9x13 dish with cooking spray. Lay the 6 pieces of bread in the bottom. In a large bowl, beat the eggs, milk and add the cheese. Pour the egg mixture over the bread in the 9x13 dish, add the cooked ground sausage and the cooked, crisp & crumbled bacon. Store covered overnight in the fridge - this step is necessary so the eggs soak the bread correctly. The next morning, bake at 375 for about an hour.
This should serve quite a few, but you could make another smaller one just in case. We use this on Christmas, it's yummy, but we don't eat too much so we can save room for Christmas Lunch.
Mine isn't a casserole but it's tasty and easy. You can make several and pop them in the oven for 10 minutes and wella breakfest is ready.
1 lb sasuage
1 cream chesse block
1 pacage pilsbury cresent rolls
Brown sausage add cream cheese to it and mix well
Put cresent rolls flat (together) on a baking sheet
put sasuage and cream cheese down the middle
roll up edges of rolls
I do an egg white wash on top of the rolls. It makes the rolls "crispier" and then sprinkle poppy seeds on top.
Bake according to the roll directions.
it's a quick easy favorite food for my family of 6

I used 1 box of chicken stove top stuffing and a 1 pound roll of Jimmy Dean Regular sausage for the meat. I also used 8 eggs, instead of the 6 suggested, and an extra cup of cheese which I melted on top. (NOTE - always use fresh eggs in a casserole - the difference is very noticeable)I also used a 9x13 baking dish. With the number of people you are feeding, you will DEFINITELY need 2 of these. Serve with a fresh fruit salad and your friend's breakfast will be a hit!
One note on a couple recipes you've already been given, my sister-in-law made one of the breakfast casseroles where you put the crescent dough on the bottom and I am here to tell you that was nasty. The dough in the middle of the casserole was raw so it was all gooey and gross. If you choose to make one of the ones with the dough on the bottom, I suggest cooking the dough for a while first, before adding the rest of the ingredients. The rest of the casserole was done and if she had cooked it any longer, it would have been burnt so this is just a warning that sometimes that dough doesn't get done and that's not a fun thing to bite into. No one else seemed to mind, but I was grossed out. [shudder]

We do the Breakfast Casserole like Cindy's also, except instead of the bread, we use potatoes. I get the Orida Southern style hashbrowns. They don't have to be cooked before hand. We also sometimes warm up flour tortillas and make breakfast burritos with it.
My mom's recipe is the same as cindy's but she cuts the crust off of the bread and layers the bottom of the 9X13 with the crust crumbs. She then adds the meat and cheese and covers with the bread. pour the egg mixture on top of the bread and bake. She always makes this the night before and it works out perfectly to have ready to bake the next morning.
you can do what ever b-fast meat that you want - ham, cooked bacon, browned sausage, you can even add mushrooms. My grandmother used to make one of each so that their was a variety on the holiday morning - besides we needed more for the larer family. Each 9x13 easily serves 8 large pieces but if adding fruit or another side it could do 12.
Here's a recipe that I make often and it's always a HUGE hit. In fact my husband just asked me to make it so he can take it to the deer lease this weekend. Oh yeah, it's also super easy and a hit with kids!
1 lb sausage
1 brick of cream cheese
2 cans cresent rolls (I get the big ones)
Brown sausage and drain. While sausage is draining melt cream cheese in pain. Mix in sausage when cheese is melted. Unroll cresent rolls and put triangles together to make rectangles, sealing seams. Spoon sausage mixture into middle of rolls and seal roll around the mixture. Bake according to directions on can.
To make the night before I make the sausage/cream cheese mixture and refrigerate. In the morning I warm the mixture in microwave before spooning it into the rolls. You may need to double or triple the recipe for a big crowd.
I have made this for a number of years and always get requests for it. My mom gets requests for it too every year at their office brunch! You can't go wrong with it!
Upside Down Banana Walnut French Toast
1 1/2 cups packed brown sugar
1/2 cup butter or mrgarine melted (I always use butter)
1/4 cup corn syrup
1/2 cup chopped walnuts
3 medium bananas sliced
1 loaf (about 1 lb) sliced unfrosted firm cinnamon bread (I always use Peppridge farms)
6 eggs
1 1/2 cups of milk
1 teaspoon of vanilla
1. Spray bottom and sides of a 13x9-inch (3 quart) glass baking dish with cooking spray or grease with shortening. In large bowl, stir together brown sugar, butter, corn syrup and walnuts until smooth. Gently stir in bananas. Spoon banana mixture into baking dish.
2. Reserve heels of bread for another use. Arrange 2 layers of bread on banana mixture, tearing bread to fit if needed.
3. In medium bowl, beat eggs, milk and vanilla with wire whisk until well mixed. Pour over bread. Cover tightly and refrigerate at least 1 hour but no longer than 24 hours.
4. Heat oven to 325. Uncover and bake 45 to 55 minutes or until knife inserted in center comes out clean. Serve portions upside down, spooning sauce from bottom of dish over each serving.
Get a 13X9 pan and spray it. Depending on how eggy and/or fluffy you like your eggs- beat 12-18 eggs with a little amount of milk. You can make this with a variety of different ingredients- chopped bacon, sausage, veggie- you imagine it and it will work. I usually do a veggie one and then either a sausage one or a bacon and jalapeno or mixture. Cook the meat and cover bottom of greased pan. Cover with 2 cups of shredded cheese- we prefer cheddar. Pour eggs over top. 375 degree oven for 45 min to one hour. Can reheat the next morning and it is still good. No matter what ingredients you use they go first followed by cheese and then the eggs. I make it the night before and reheat the next morning for church all the time.

For 1 quiche you will need:
1 pie crust - thawed place in pie pan edge crimped
3 eggs beaten
1 can evaporated milk
salt and pepper
I add onion powder and garlic powder
2-3 cups shredded cheese - any kind!!! Swiss, cheddar, jack, mozzeralla - I have used whatever I have - it works every time
assorted fillings - bacon, sausage, ham, mushrooms, spinach, tomatoes
I usually do one quiche with meat, and one veggie ( I like spinach and tomato)
Mix the eggs, milk and seasonings. Place your cheese on top of the crust in the pie plate then whatever toppings you choose - pour egg mixture over - bake at 350 for about 45 minutes - can totally make ahead and serve at room temp - or reheat
Emeril's Bayou Bend Brunch Casserole (just Google it). For a large crowd, two might be necessary; to accommodate our entire family, we usually do one with meat and one without. We also use a variety of cheeses - including Gouda and Swiss (not together though!) - rather than just Jack. Also, we usually make the casserole the night before to let the bread soak up the egg, and then the next morning, the first person up pops it in the oven.

When we are going camping or hunting before we leave I buy a tube of Jimmy Dean maple sausage and fry it up like hamburger then I add and 18 count eggs to it and scramble it all up together. When it cools down I put it in a zip lock. In the mornings we take a flour tortilla and put some of the eggs on it and some shredded cheese pop it in the micro for about 30-40 seconds, picante sauce if you like and roll it up. Balanced meal no dirty dishes and you just put the bag back in fridge. No muss no fuss.
This is my aunt's receipe and my kids even love it!
Ingredients:
Pillsbury crescent rolls
eggs (approx. 9)
Prepared sausage/bacon
onion peppers mushrooms...you can add whatever you like to it or nothing at all!

Spray the bottom on a rectangular pan...I think the one I use is 13x9. Unroll the crescent rolls and spread on the bottom of the pan. Blend the eggs together and pour over hte crescent rolls. Then throw in the toppings that you like....be sure to have already cooked the bacon or sausage. Then top with cheese. You can pretty much change the amount of eggs you need or cheese or toppings based on your likes or dislikes. Then just bake it at 350 degrees for about 30 or 45 minutes or until a browned around the edges. So yummy! Enjoy! I usually make 2 of them for large parties...one with bacon and one iwth sausage.
We do the same recipe that Cindy sent for mornings we have company, except we omit the sausage and just do bacon. It's easy, nice because you can make it ahead of time and tasty. We serve it with different salsas. Yum!
Go to sams's club! they have some yummy breakfast casseroles and you will all probably be having a huge dinner later! Happy Holidays!
Frozen hashbrowns, eggs, veggies if desire, meat of choice...ham or sausage, cheese. Mix together the night before. Pop it in the oven first thing and bam. You can add antyhign you want to it.
