Black Beans and Tofu Recipes

So I am WAY over my monthly grocery budget already, but have a ton of black beans, and some tofu on hand. What are some great dinner or lunch recipes using either one?

Okay, I have been looking for this recipe for my own use for a long time and recently found it, so I'll share! It calls for kidney beans, but I'm sure if you used black beans it would taste really good too.

Mexican Bean Burgers
1 carrot sliced
1 15oz can kidney beans
1/2 cup chopped green bell pepper
1/2 cup chopped onion
2 cups salsa
1 cup dried bread crumbs
1/2 cup whole wheat flour
1/2 teaspoon black pepper
salt to taste
1 pinch chili powder

Place carrot in a bowl, fill with about 1/4" water, cover and cook for 2 mins or until soft. Drain.
Mash beans and carrot in a large bowl. Mix in green pepper, onion, salsa, bread crumbs and flour. Season with salt, pepper, and chili powder. And flour to create a firmer patty mixture or more salsa if the mixture is too stiff. Form into 8 patties and place on a greased baking sheet.
Heat a large skillet over medium high heat and coat with cooking spray. Fry the patties for about 8 minutes on each side or until browned and firm.

It's been a while since I made these, but I think I did it on the grill. They patties are pretty thick and firm and seriously are really tasty. I serve them with a little avocado and all the other burger fixins'!

In a skillet add some oil, chopped scallions or a little bit of chopped onions, 2 cans of black beans, 2 cups of frozen corn, 1 chopped tomato, some cilantro (optional), cumin powder, dried oregano, salt to taste, and paprika if you like some heat. Cook for few mins (about 10). Use as a filling for enchilladas - I just use some corn tortillas, dip them in enchillada sauce add the filling and roll them up. Put in a baking dish. If any filling left - add it to the top, put remaining sauce and cheese on top. Bake till cheese is bubbly/browning. Enjoy.

I love black beans and rice for dinner. If the beans are dry, cook them with onions and garlic. If they're in a can, then saute up some onions and garlic and toss the beans in with some chicken stock so that you get a bit of a soupy sauce. Then cook up a pot of rice and throw in some chopped up tomatoes and onions. Serve the beans and sauce over rice in a large bowl with a side of sour cream and a large salad.

Use the black beans for tacos, tostados, or burritos. Heat the beans with taco seasonings such as garlic, cumin and chili powder. Add tomatoes, lettuce, cheese, and salsa, or grilled zucchini, mushrooms, peppers, and onions. Serve with rice.

Tofu stir fry- make a vegetable stir fry, and add chopped tofu instead of chicken.
Fried tofu- lightly coat cubes of tofu with flour, and fry. Serve with a sweet sesame sauce for dipping.
Tofu soup- Chopped tofu, vegetables(celery, carrots, broccoli, peppers, etc.) add beef bouillon, soy sauce, and sesame oil.

-I add drained corn, chopped red onion, diced tomatoes to my drained cooked black beans. I serve w/white rice.
