How about a funny gag type gift. Maybe ear plugs, Advil, rubber gloves and a pair of tongs (Mr. Mom movie), caffeine pills ect. I think that would be a hoot and my husband would get a kick out of it.

A man diaper bag. I think Land's End or Eddie Bauer has them.
How about a backpack-like baby/toddler carrier. If they are outdoorsie people, I bet he'd love one.
Find a great book about dads/kids.
I have to agree with Margie. My husband got an Eddie Bauer backpack diaper bag and enjoyed having a "manly" looking diaper bag (especially since mine was a Vera Bradley)! Other than that, maybe just a cute bib that says Dad on it somewhere, or a picture frame with Dad on it that they could put a baby picture in, or even a shirt that says "World's Greatest Dad" or something like that on it (my husband would have hated a shirt, but you know the dad, maybe he would love it). I don't think many dads expect much for them at a baby shower, so anything you give would probably be appreciated.
All my friends are really into sports. So as Dad gifts I always get them a jersey of their favorite team.
There are tool belts available that are stocked with diaper changing items. They typically have tongs, ear plugs, clothespins, goggles, rubber gloves, etc. It would be very easy to put together if you didn't want to purchase.

My husband always told everyone he wanted tools for a baby shower gift. He never got any but I think maybe an apron with a note saying how amazing he would be to his wife to help prepare meals since she will be so sleep deprived and busy.
A good diaper bag, such as already mentioned or from diaper dude.
Maybe some nice tools, cordless drill, hammer, ratchet set. Get good quality stuff from Dewalt, Ryobi, Craftsman, etc....There is a ton of baby stuff to put together.
if you know what the sex is of the baby there are book call why a son needs a dad...it a super cute book!!!
