My son is allergic to eggs and we made M&M shortbread cookies together two weeks ago. Very good! I plan on making them for his Valentine party using the valentine M&M's
Just google M&M shortbread cookies for the recipe. Note - instead of stirring in the M&M's I pressed the dough out and my 3 year old decorated with the M&M's. I'm thinking about arranging them in a heart shape for the party.
Chocolate no-bake cookies! Google the recipe. My 11yr old makes them all the time. They are easy, cheap and good!

How about rice krispie treats with those v-day colored M&Ms mixed in? My son is also allergic to egg, and I have been not so successful in trying to find egg replacement that works well in baked goods. Of course, I guess I should also say I can't bake very well either... lol

You can use any flavor cake mix and mix with 1 can of soda. Any flavor. I have used diet coke with chocolate cake and sprite with yellow cake.No eggs. Nothing BUT the can of soda. My grandson was allergic to eggs and I used to have to make cakes like this for him all of the time. Cupcakes would be great for the Valentines day party. Good Luck. C.
Rice Crispy Treat. And you can use pink marshmallows or pink/red dye for the marshmallow cream.
Dirt Cake is also a wonderful treat for kids.
OREO COOKIE CAKE (DIRT CAKE)
1 (16 oz.) pkg. Oreo cookies
2 (8 oz.) pkg. cream cheese
2 (8 oz.) pkg. whipped topping
1 c. confectioners' sugar
1 1/2 sticks butter
1 pkg. chocolate pudding
2 c. milk
Crush Oreos very fine. Spread 1/2 Oreos on bottom of pan or flower pot and pour butter over Oreos. Let chill in refrigerator for 1 hour. Mix cream cheese, powdered sugar to 1 box of whipped topping until smooth. Prepare pudding as directed on package. Spread cream cheese mixture over cookies, then layer chocolate pudding and other container of whipped topping. Sprinkle remaining Oreos on top. If you use flower pot you can make more layers and stick an artificial flower in for a surprise.
YOu could top it with candy hearts to make it a valetine theme. or cany flowers.
Crazy chocolate cake
3 c flour
2 c sugar
2/3 c cocoa
1 tsp salt
2 tsp baking soda
1 tsp vanilla extract
2 c cold water
2 tsp white vinegar
2/3 c vegetable oil
Mix all ingredients right in a 9 x 13 inch pan. Or mix in a bowl and make cupcakes
Bake at 350 degrees F for 35 minutes or so, less for cupcakes (probably about 20 min).
Other ideas- fudge, rice krispy treats, caramels. Good luck!

Our neighbors are from India and are vegetarians. Years ago when our kids were growing up together, I learned from the mom to replace eggs with applesauce in my cake and cookie recipes.
Although, I don't remember how well it worked, I do know that everything always got eaten excitedly by all the kids.
A great fun snack for kids of this age are little "fish bowls". All you need is some blue jello, swedish fish and sandwich bags. Make the jello as directed and then poor it into the sandwich bags. Add a few swedish fish and use a twist-tie on the top of the bag. Each child gets their own little fish bag just like at the fair! If bags are too messy (and I think they probably would be for 3-year olds) you can substitute the baggies with some clear plastic dixie cups! Enjoy!!!
OK, I am not responding to your request about eggs - there are tons of recipes out there and I'm sure you will find plenty. I am responding to your "about me" where you say "I still feel like I don't know everything." Well, I hate to tell you but you will NEVER know everything about child raising! I too had an easy going child and a "difficult" one. (ironically enough, my easy child is named Nathan!) I suggest you get the book "The strong Willed Child" by James Dobson. And I encourage you not to be too hard on your son or yourself. My difficult child was like fine wine, he got better with age! He is now 21 and is a wonderful young man. Hang in there!
We buy powdered egg substitute. You use it in place of eggs when baking - you add a little water to the powder per box instructions.
So then, use any of your favorite recipes and just use that in place of the ingredient "eggs."
Chocolate no bake cookies don't have eggs, nor do peanut butter balls (but there might be a peanut allergy in teh class). You can find recipes online.
You are so sweet to think about that child's allergies. My daughter from the time she was 18 mos old was allergic to eggs, milk, wheat, corn, soy, peanuts and green peas!! It seemed like I was always paranoid!! And I think so were the parents. I always took her treats to school with me because you never knew what was in anything you did not make or buy. But the gesture you are making is the sweetest thing and I would have appeciated it so very much. There are substitutes to eggs such as bananas, there is an egg substitute you can buy(I would ask the mother first though). I used to make my daughter cookie with oatmeal, sugar, ricemilk and bananas!! Thay were great!!You could always go and buy her cookies and treats too at Earth Fare or alocal health food store. There are several recipes on the internet just type in treats without eggs in the subject line.
My other piece of advice is this, be very careful if you are cooking other tyreats as well, because there is a chance of cross contamination. The pans, bowls, spoons etc need to be washed very carefully before use and kept separate from the others you may be using..
Sorry, this is so important!! If she can stay away from eggs and not have another allergy attack then she may grow out of this allergy, which my daughter did.

Every kid loves Jell-O. In the past, I've made cherry Jell-O Jigglers for Valentine's Day. Here's what you do:
Mix enough to pour into a parchment paper-lined jelly roll pan (15x10x1) to half an inch thickness or more. All you have to do is wait for it to set. During that time you can cut straight straws in half and ribbon to tie into small bows around the straws. Use heart shaped cookie cutters to cut the jigglers. Then insert the decorated straw through the bottom of the heart at least half way. Set each 'heart lollipop' onto a fresh sheet of parchment paper on a cookie sheet suitable to wrap and carry. The kids will think it's the coolest thing!
Rice Krispy Treats are great (no eggs and no milk!) Add some red candies (make sure no eggs- not sure if red M&M's would work) and you have a winner!
Try a no-bake cookie. I doubt they'd have eggs in them.

We have a friend who also has a child with egg allergies. You can look online for egg substitutions. Two egg substitutions that I have are the following:
1 egg = 2 TBSP water + 1 TBSP oil + 2 tsp baking powder
or
1 egg = 1/4 cup applesauce
I have also heard that there is an egg replacement powder, but I have never tried it.
If you have a recipe that calls for three eggs you can use applesauce for two of the eggs and the water, oil, baking powder for the third. It was recommended by someone on the internet and I tried it in some cupcakes and they turned out pretty good.
